VEGAN - CROCK POT POTATO SOUP


What is yummier than potato soup on a stormy day but who wants all that heavy dairy fat sitting on their wasteline.  Try this classic potato soup recipe and replace the dairy products with some tofu and almond replacements.    THIS IS ALSO GLUTEN AND DAIRY FREE.

4 Yukon Gold Potatoes
.5  Bundle of Kale
2 tablespoons Tofutti Sour Cream
1.5 cups baby carrots chopped
1 leek, sliced
.5  white onion, diced
6 cloves of garlic
2 vegan herb and Sea Salt bullion cubes
1/2 gallon of almond milk
2 tablespoons of cornstarch
.5 CUP OF veggie shreds

Salt and Pepper to Taste

Chop to preferred size, dump in the crock pot, (don't forget to compost:), EAT, top with habaneros ofcourse and a pickle on the side.
